I think you DID NOT specify that a person can be intolerant to gluten and NOT be a celiac. That is a very important distinction.
I have had biopsys done and blood tests, which showed I am not a celiac, yet the withdrawal of gluten from my diet has in effect allowed my gut to being healing. If I eat foods containing gluten I am very sick. My doctor says I am Non Celiac Gluten Sensitive.
